With the holidays approaching, I can’t help but think about my favorite comfort foods. Holiday feasts were especially unique in my household. Growing up with a Korean mother and American father, we always have an interesting mix of both Korean and American cuisines! I am so fortunate to have the best of both worlds. Being on keto, I hardly have cravings for high carb foods. However, during this time of year, I must admit that my carb cravings return!
This year, I have decided to try and recreate a few of my favorite holiday staples. My mother always makes fried rice for both Thanksgiving and Christmas. Her fried rice is the best I’ve ever had, but unfortunately it’s loaded with carbs. To help tame my cravings, I created this delicious, low carb fried “rice” using cauliflower rice that I picked up from Whole Foods. I love this keto cauliflower fried rice so much that I hardly even miss my Mom’s recipe!

Ingredients:

2 tbsp butter
-
8 ounces ham
-
1/2 cup red onion
-
1/2 cup broccoli
-
3 cups cauliflower rice
-
1 tbsp sesame oil
-
1 tbsp coconut aminos
-
1 tsp oyster sauce
-
onion powder
-
garlic powder
-
sesame seeds
-
salt + pepper
Instructions:

In a cast iron skillet, heat 1 tbsp of the butter. Add ham and red onions. Cook until onions start to turn clear.

Add remainder of the butter. Stir in broccoli and cauliflower. Cook for 4 minutes, stirring often.

Stir in sesame oil, coconut aminos, oyster sauce, onion powder, garlic powder, sesame seeds.

Season with salt and pepper to taste.
